There's no reason it can't be stable with air shocks at all corners.
Get all the weight low and centred, get the anti-squat nice and low in the rear so it's not lifting under torque and seeing as you won't be going fast build the roll axis reasonably high at both ends.
Also get the oil level up ...

ive had 4 cars with hilux diffs/brakes with sierra booster and master cylinder
and neva had a spongey pedal
my car atm has hilux disks all round with stock sierra master and booster and i have no dramas at all

My old Sierra needed 10" of slip and I didnt want to risk the long slip from Locktup thats why I went with the box section.

I have only always used standard hilux slip joints on all my comp trucks... my lux ran 18" race runners front and rear and never once dropped a shaft out even on full ...

i think u will have less AS then 86% as i find it hard to belive your COG is only 34" from the ground on 44" tires
id build it with the roll center as high as i could get it (helps body roll, and and the diff swings to the side that is compressing helping keep the tire out of the tubework/body)

sounds like he has a centered rear diff so flex isnt going to do much, and generally if your flexing your car your not going at 100km/h your goin under 5km/h so as long as they are not goin past there limits you will be fine

Certainly not ideal & personally I would be correcting as soon as finances would allow as it will reduce it's life regardless.

You got to decide, Comp car or Rego car. Completely different spec. Alot of comps in NSW don`t need rego anymore.
Build one to do both means wasting alot of coin with stupid engineers and rules that wont make a very good Comp rig.
A good start:
