Auto's are a lot better than manuals on soft sand, but would recomend a large trans cooler, legal 2'' lift and road style soft side wall 31'' tyres will do the job but I would still run an 8'' rim

I have a tj and a cj with FWH both v8 and the cj is still cheaper to drive even with the tj running on lpg, you can tell when the hubs are left in on the cj

You can fit any early v8 as long as it is on lpg only or later eng if it complies with the same ADR,s as your XJ and max eng capacity is governed by tare weight and number of cylenders.
