speedo you should be able to get around, may need a calibration box to get the speedo to read correctly.
Tacho i haven't worked out yet, You can use an autometer tacho, set it to a 4cyl engine for it to read correctly.
temp and oil should just have to fit the toyota sensors to the engine using adapters, holden sensors have to stay in there aswell.

I think these conversions will be huge in the next few years
There is so much to look into to get the job right
I know when I start I'll want everthing spot on
Cooling will be a concern do people use there factory radiator or do they get a custom alloy one done ??
Cheers Dan

No worries. I think these are gonna be a real popular conversion, with the motors getting pretty cheap now.

I think the standard cruiser radiator should do the job. Marks adapters recomend changing the water pump pulley to a V6 rodeo one that accepts a viscous clutch fan. Or i think a couple of electric fans would do the job.

Just be prepared to spend alot more than ypou think its gonna cost
