assuming its a sierra, and assuming you have stock tyres at the moment, and assuming you have no lift... go 225/75r15 and work the sills with a hammer. as far as terrain goes, go to a few tyre stores and get their opinion based on where you plan to drive and what percentage is on/offaroad... once you have their opinions and prices you can make an informed decision, or post here the selected brands and your driving styles and perhaps someone has had experience with them.

running 31's you must be doing some "good stuff" offroad - tell the tyre place what terrain you drive most offroad, and how much onroad you do and theyll fit you up to a good tyre.
This said, my cooper STT's are awesome onroad and even better off.... and theyre only said to be a "10% on road" tyre... but theyre awesome in the wet and dry and tread wear seems great so far (5000k's)
