I want to run 35/11.5/15 Silverstone Simex's on my 80
at the moment I've got 2.5 inch lift which has sagged a bit can I get away with a 3" lift or do I have to go to a 4 inch lift?

3" springs, 12mm front spacers, 40mm front/rear bumpstop extensions and loooong shocks.
In short that is what Darren at Autocraft in Geelong has done to fit 37's. Obviously the spring rates and shock lengths are what control this, his name here is Assassin Offroad and would be more than willing to help you.

I bought my car off a guy in WA and it has:
3" Tough Dog springs and shocks
has 30mm coil spacers on the front.
Runs alloy front bar and steps and twin battery
Stock rear bar but carry a full size spare in the back plus recovery stuff.
16x8 GXL rims with 35x10.5x16 Pedes fit
15x8 ROH rims with 35x12.5x15 Baja Claw Radials scub a little on the rear of the flares under full flex.

Just hit up the 4 inch mate, you already want bigger than a 2" so how much longer till you want bigger than a 3", or a 4" for that matter, carstor bushes are a bitch to get out, go the 6".
