After a bit of asking around i have worked out that the filter on my evaporator is blocked. My question is, what is the easiest way to get to it to clean it out. It's on a 75 series ute.

sorry to make your day but the dash has to come out. Dash out, undo air con lines (will need a regas and new seals). take evap out of plastic box and CAREFULLY clean out using a combination of water jets, reverse direction flushing and patiently picking out the crap with a needle or something. Make sure you cap off the ends of the evaporator and seal them from getting moisture in, or sit a hair dryer on one outlet and blow hot air thru it to get moisture out.

Also not going to make your day, I have done about 5 or 6 of these and every one of them strips the aluminium threads on the evaporator no matter what we did. So a new evaperator it will be!!!.

Try Ashdown Ingrams, or a reputable aircon auto electrician parts supplier. Buy a new receiver dryer whilst you are there, you will need a new one if the system is opened. Take the old one with you, to make sure you get the correct one. Sometimes the fittings have been changed.
