Hi im setting up my GU Ute for touring i am searching for a water tank to hold 100L or there abouts to mount under the center of the tray. i am in Brisbane and hoping someone knows of someone or somewhere i am able to buy or have this size tank made

he works from home and will custom make a tank to fit where you want, the size you want and fittings etc. To give you an idea, I had a 120lt diesel tank made for $290 with internal baffles the works. He's based in Burpengary.

I can recommend these, they are built really strong - a lot tougher than caravan style tanks.
I have the 80l slimline on the floor in the back tof the GQ, its bolted to a frame on the front and back which lets it sit above all the bolt heads on the floor etc so they don't rub, all of my gear then sits on top of the tank - so not only do the front and back parts of the tank support around 100kg (full tank weight) but everything else as well.
Have a mate with a GU ute who has one neatly bolted up under his tray also, and they're baffled - he got the same tank as me (PRV80S-MK) but with the optional pump, sounds like your exact application, its definately what i'd get if i had a gu ute.
