As i am looking into fitting bigger than standard tyre this has come up.
How do most of you get on with bigger than standard tyres with insurance and ADR regualtions
I am looking at fittimg 265/75-16 to my challenger.
Standard size 255/70-16

Adelaide is pretty strict regarding changes to vehicles. Might pay to phone the Dept of Transport to ask.....they will probably tell you that you can't go bigger / wider than 15mm from the manufacturers largest size noted on the tyre placcard.

Ferozius is correct - most states limit tyre changes to 15mm above the largest tyre listed by the manufacturer. Your Challenger came with 265/70-16, so going to 265/75-16 is nominally 26.5mm taller.
But at least in SA you have the option of having larger tyres engineered. There was a thread (somewhere) on OL recently where somebody tried to do just that in SA (with a Suzuki?), and couldn't find an engineer specialising in 4WD modifications. From memory, they only found one engineer willing to examine the vehicle, and he (?) wanted to do slalom tests and drive-by tests. But I don't know how large the Suzuki (?) wanted to go.
Given your intended tyre change will lift the COG by a MASSIVE 6mm over what SA Transport would allow anyway you might be able to find somebody to sign off after a guards and braking test.
If you do find an engineer willing to be reasonable about it make sure you post details!

got onto a engineer today and have had a bit of a win
If the wheels fit and don,t anything he will sign them off and issue a engineers certificate.
Due the small increase (40 mm over standard) i don't even have to have the speedo re-calibrated
Finally something good about living in SA
