As a carpenter i say go wood. I have done a couple of trays for there 1tonners, all custom desinged. They use them for everything, from show to carrying things. They just have a sheet of 3mm perspex to protect it whilst they arnt at car shows.
Probably leave as is. I got tube tray made for my truck, and it looks OK with no mudguards/ flaps, but reality is that you have to have em, and it's very hard to blend them in with the tray. I'm considering going back to styleside 4 mine, custom of course.
My mates got a red middy in wollongong to which he made into a middy with a tray back, ie closed the cab so it's a proper single cab, custom tray, I'll get some pics this week for you if you want some ideas.

Cannot believe the overwheling majority towards the checker plate tray. Still not entirerly sure but i think i may have to disagree with you all on this one.

I'm a big fan of marine ply with marine carpet, over timber etc., get home hose it, good as gold, starts to fade, not much to rip it off and get new stuff, compared to cutting, drilling, welding, grinding, more work.
