Keep the MT classic lock alloys they are -30 offset and are stronger and lighter than steel rims.
If they are -30 offset and 8" rim does this mean i would need something like a -55 in 10" to achieve the same amount of clearance for chassis and inner guards?
also does anyone know where to get the steel inserts for these classic lock rims? had one nearly fall off, tapped out inserts but can find any to replace them yet!

No its not a proper measurement of any sort most tyre shops cant even tell you what that means but id assume -30 is probably similar to the -44.

Yes you would need bigger offset to match your current rims, I don't know any brands that make -55 for 10s but you can get -76 for 10s this gives you 2.5 inches backspacing.

hey ive got 35/11.5 15 on 8'' but the tyres say they best fit on 9'' wheels so different tyres suit diff rims

Yes but you're assuming that the manufacturer knows best. Which is not always the case.
