New wheels aren't that dear- my CSA Ranger RV rims (read: Sunraysia) were under $60 ea new- and they are 15x7" which gives you more options for tyre sizes. So don't pay too much at a wrecker for second hand rims.
Factory rims are only 15x6" from memory.

Factory rims are 15x5.5 I think. May vary depending upon the model.
Go the muddies. But go a 30x9.5. 31 will put alot of stress on CV's etc. Bob jane have a good sale on teh moment. From memory they were about 240 a tyre.
You must remember the extra grip will show up the weak spots. I broke a front uni purely because of the extra grip. Hubs will also be a weak spot. (broke them too)

If you are going to a wrecker, remember to check out Suzuki, Jeep, Lada, F100 rims. All bolt straight on to Daihatsu, and will give you a greater choice of style and width of rim. I would go the route you plan. 2 sets of rims and tyres. One, with A/T or H/T patterns for mainly bitumen driving. The second set, with M/T fitted for mainly off road work. Go buy a floor jack, and you should be able to change all 4 within 1/2 hr.

I have a set of 5 steel rims taking up space in the shed. $50 for the lot complete with 235 no terrains (baldies)
They're 15 * 7 I think, I'll get a pic for ya.
