Simex tyres are designed to run on a thin rim 31x10.5x15 should run on a 7 or 6" rim. this will help stop them from poping beads
My friends personal experience.
He had 32x9.5.15 runnin on 6" rims,
he never poped a beed and they lived at 8 to 10psi, No beed locks.
he's no chicken either.
Just dont drive them on road all the time like this. they do have a tendency to get tyre wobbles at a low psi
also another thing, most tyre places wont fit such a wide tyre tyre on a thin rim if its for road use.
I know the Simex tyres are great but mainly for the heavier cars, Why not try
Silverstone:

or Motorway Mongrels:

they all have the same pattern, I know the simex have a 6ply wall so they dont flex as nice as you would think but they are very strong on rocks, the other tyres are only a 3ply wall so they flex up rather nice

Just had a look at my 32x10.5r15 and it says that the min rim width should be 8.5 inches! I've been running them on 7" rims though and not had a problem, but i think your 5.5" rims may be too small.
Just to clarify, you are talking about the Extreme Trekker and not the Centipede MT aren't you?
