Noob Wiring q's

Ok finally got my head around the basic's of car wiring.
Now I need to now know the optimum size's for the major things...I will be running everything from the dash switch's to the fuse/relay bank in the factory size's and keep the fuse's to that size as well.
We basically designed it to have minimum connections in the engine bay, we are having one power feed from the battery to under the dash were hopefully I can find a water proof fuse box along with a row of relay's. (is this the best way to go??)
It's a 135amp alt what size to the batt+starter?
h4 headlight's?
basic kc spot's at the moment. but will be HID's one day.
Recomended place's in melb to buy relay's/fuse box/wiring and anything else that I'll need?
can any point me towards some good online resource's so i can actually understand what I'm doing properly?
and finally, any helpfull hint's and tips?
