I think I spoke to you over the phone today. I will give the discussion a kick along by giving my ideas.
I suggest Dobinsons coils because they do a lighter duty coil compared to other brands. (which is still extra heavy duty in my mind). Because the Defender has such a high carrying capacity the after market brands have built the coils stiff so you can load it up without killing the coils.
I am willing to get some special build coils made up for the same price to suit someone who doesn't plan to load up their Defender so much. (Will take a couple of weeks to make up.) I will do the same for bigger then 2" lift coils.
Shocks will depend on your budget and whether you want it built for comfort or control.
Expensive control is Bilsteins.
Quality but cheap control is Dobinsons.
Quality but cheap and a bit more comfort is Lovells.
If you plan to tie your rear coils in or use dislocating cones then use Procomps. OR you can use any of the above brands but use a GQ rear shock and get a pin to eye conversion done. You do lose an inch of compressed shock length.
