you don't need a passenger mirror as long as you have one external
mirror thats why you see dirt bikes with one

Door-Less Mirror Brackets
These brackets mount to the stock door hinge plate and allow you to run stock mirrors while on the trail with your doors off! This kit made by Calmini take the guesswork out of making your Samurai drive able with the doors off. Brackets can also be used in conjunction with our roof rack kits as well. Mirror brackets are finished in semi-gloss black powder coat and come complete with mounting hardware. No drilling required to install, the brackets are entirely bolt-on.
Price: US$49.00

i saw some doorless mirrors while i was searching today, and all they had done is taken the mirror off the door and moved it 4ward, to the little square section, just behind the bonnet, (does that make sense), i was looking at doing this to mine, but my snorkel is in the way

I think thats were I was talking about and now I think about it those brackets would put it in the same spot and the windscreen frame blocks the passenger side.

From what I can see the mirrors will be mounted at the same height as normal but about 80-100mm further forward than they are on the door.
As stated previously, to remain legal you only need centre and drivers rear view mirrors.

I went out and bought my self some hilux style mirrors which have a long enough swing to be seen on the passengers side. Also makes it easier to fit a snorkel on the drivers side. I found that a much better option than trying to make the stock mirrors work. Should be cheap from a wreckers too
They fold back flat for when the tracks get really tight and i've rolled the car on one and all that broke was the glass!

(sorry didnt have any other photos of the mirror mounts just of the car

You can buy little Grimace flexible mirrors to fasten to push bikes. Technically that's all you would need if legality is the only issue. But I like mirrors and I wouldn't want to drive without them.
