What is the largest tyre possible to fit these rims?

Largest "Standard Tyre" i've found is prob a 235/85R16. If you check through different manufacturers data you'll find some companies tyres have a larger rolling diameter than others.
I'm currently running 7.5/16 MRF Super Tractions on my middy. 12 ply, very aggressive mud pattern. Designed for mine & agricultural use.

I'm guessing you mean 5.5 x 16 rims ???
If so you can fit 235/85 x16; 8.25 x 16;

34x9.5's.. would work.. but only just..
go 34x9.5r16 boggers..
not sure what size those swampers are...

There are some Bar Treads available in the Nankang brand that are tallish.
