Heating probs, anyone got a 5LTR that can help?

Ive got a carby 5ltr and radiator to suit in my hilux and its not a "hot motor" just a cam and abit of head work.
At the front the twin thermo's are off a V6 I think as they look around 10", but there not doing the job, its still overheating as soon as the temp outside is like over 20 degrees.
Im going to cut away more of the front end this weekend as alot of the radiator is blocked by the body and the bottom of it does not get any air at all! The guy who I bought it off put somt stupid gemini fan on whitch doesnt do shit so im thinking of changing it to a clutch fan to suit the radiator shroud and also get a colder thermo (thats is it isnt already the colder thermo for it)
Alot of people also say ford XR8 thermo's are the best and I could put one on the back of the radiator.
Wat do you guys think?
