Rochester QJet

Hey guys and gals
I have a prob with the carby now that the weather is cooling off abit.
My engine runs really cool (temperature wise
) Temp gauge barely moves over 1/3 and it seems the engine is not getting hot enough to cut out the choke
It bogs down on intial throttle, stutters abit then clears its throat and then its fine. It does this whether the engine is just startde or after 3 hours of wheeling
Now here is my conundrum, I don't have a choke on the carb
Actually is has the heated choke but it has been disconnected. I was going to get an electric choke but never got around to it.
History - Rochester QJet and edelbrock performer manifold on a 253 Red pre-pollution V8.
Would it be temp/choke or something else ?
