just brought a seirra, i want to put some 30 or 31' rims on it, with some mud tyres, what will bolt straight on and be fine ??

Neither tyre will "bolt on fine"

30's will require trimming the bumper bracket, but little else.

31's will require a 2" body lift as well.

Both would benefit from transfer case gearing, although 31's will NEED gears or you'll murder your clutch on and off road.

Both tyres will require choosing the correct offset rims, although as you don't state what year sierra you have, I can't help more fully.

PS I assume you mean 30 or 31" tyres, not rims, although these days you can't be sure :D

its a 1985 zook, would be happy with some chunky 30" muddys, on some sunraysia's ??? it will be getting a 2" spring and body lift in the future, and also gears/engine conversion... but for now just want it to look a little tuffer, what sunraysia's fit?

can i suggest to start collecting all all the parts in your shed to build what you want, then build it.

To look tough in the mean time, just get some of these.
