hi mate,
engine and gear box can stay on the chassis and just lifdt the cab over the top.
you will need to unplug and lable all your wiring looms, wrap them around the engine out of the way, disconnect the brake master cylinder from booster. disconnect and remove radiator, disconnect steering arm etc
there will be wiring under the cab as well coming out of the floor.
if you pull off all the other panels its lots lighter to lift off.
then bolt a 2 x 4 to the front body mounts, and another at the back and just lift it off.
note if seats etc are still in it they all add weight.
its not too bad a job.

2 strong people can lift a bare cab. with glass in still.. add dash and seats and doors and you need 3 and its a struggle.
if using a lifting device. disconnect anything you can see or easily get too, then when the cab is lifted off the chissis, start looking for anything else still attached. there will be something. im pretty sure there is a wire or 2 going to the gearbox under the cab which isnt easy to see with the body on.
