Does it have any sort of power up chip fitted. I believe some of them can cause this problem.

Boost/fuel compensator playing up, throttle cable sticky or anything in line of the accelerator pedal to throttle control.?

If the motor is off and you put your foot down can you see if anything is sticking for that 5 or so seconds and then letting go in the engine bay cable/pulley etc

check the throttle spring and the lever arm hasnt got dirt and crud
built up
under the dash on the pedal as they are all electric fly by wire throttle
if that is ok you need to adjust the throttle switch
