what would be the most accurate out of mechanical(cappiliary)or electric(vdo) with sender- temp gauge? the mechanical one reads 10deg.c cooler than the electric one!!! they both are located near the thermostat housing.

The reason why is that the cappiliary tube will loose a slight amount of heat over distance due to it being metal.
The electric should be more accurate.

Put both the senders in boiling water
The one that reads 100degC is the most accurate one (at that temp at least)
