Need ideas for tyre and wheel options. 33-35". Plus gea

Im looking to get a second set of rims and tyres for off-road use.
I Got 31" road tyres on 15x7" which will be used for every day use.
Im looking for some advice on what wheels to get. Trying to decide wether 15x8" or 16x8" would be better, and what offset i should get. I know 15" tyres are cheaper, but i already have some 16" tyres (but these may not be suitable anyway) I know this is a very open question, but just throwing it out there.
Second is the tyres. I want a set of 33" to 35" Mud tyres. I own a set of 35x12.5R16 Creepies which were on my cruiser, the patrol guards look a fair bit smaller, and probably wont fit the 35's without chopping. If they are too difficult to fit, a set of 33's might be better along with 15x8" rims, and sell off the 35's (swap anyone?)
So what im asking is, can 33's fit with minimal effort? would trying to squeez in 35's be a much bigger job? can anyone give a brief run down on whats involved for each?
I'll be fitting a 4" lift, and can add bump stops if required for tyres.
Next is gearing. Mines a 4.2 petrol auto. can anyone tell me what diff gears i would have? and what would be reccomended for 35" tyres?
Can you get away with not changing gearing with 33's?
