I want to upgrade my toyota 3rz pump to something like a commodore or falcon pump to handle running my hydro assist, just wondering what others are using? And also do you run ATF or hydraulic oil?
PS I already know about the TG and PSC kits

Ford or Saginaw as fitted to Volvo/Older Chev/others with ATF..
I'd use Ford as they are probably the most plentiful.. The old XW-XB round pumps are the go if you can find one, otherwise the teardrop style as fitted to XC-FG

Hydro assist uses a hydraulic ram to "assist" the normal power steering. The standard steering box is tapped so that when the steering wheel is turned fluid from the chambers in the steering box flows through to the ram.
