Do you have a UHF or Any aftermarket wiring under the bonnet?
There were some issues in mine vehilces with UHF wiring being run along side the engine bay wiring looms causing a similar issue.
Is the HDJ79 fly by wire like the 100? Do you have an accelerator cable under the bonnet?
If you dont have an accelerator cable, and it is fly by wire, you could have a faulty accelerator sensor. (although i think there is 2, 1 as a backup to the first).
otherwise i would thik you will need to have someone plug into your diagnosis port and dump any error codes the computer is producing.

its not something as simple as the accelerator pedal being caught on a floor mat.

My 2005 HDJ79R does a similar thing but it is caused by the Rapid chip that I have installed. It was a pain to start with but I have goten use to it now

It is standard, no UHF, not even a CD player yet, i don't have mats yet either and it's not the vinyl on the floor grabbing it.
it does have fly by wiring and the diagnostics is not logging any codes(checked that)

fly by wire is the electrical throttle, right? rarely heard of that term.
if it has an electric throttle, then the problem is quite likely to be a fault throttle position sensor.
this sensor is what reads how far you've put your accel pedal in, and if that sensor is faulty or somehow sticking then thats my bet, and you wouldnt get a fault code for it either i think.
