It might not be from in the dash. Could be mirror or in the inner guard. Door hinge.

i had the same prob in my GU and i found a good way to find it is by taking a mate for a run and get then to start by (while your driving) putting presure on individual sectiojns of the dash etc and under passenger side e.g glove box
maybe sound silly but it worked for me!

ended up finding out mine was a damn nut slipped into dash vent near windscreen

i would have a look in the a/c evaporator. the drain could be blocked and water could be moving around in the tray.

Most annoying rattle i ever had sounded like it was coming from the dash but was actually the bonnet hinge. There is a rivet in each arm on either side that allows the arm to pivot and the rivet in that was loose. Fixed it by removing the bonnet and placing the rivet on a piece of steel and belting it with a sledge hammer to tighten it up. Mine is a GQ but fairly sure the bonnets would be mounted the same in a GU.

The water is normally in the sills under your doors.. there is a little cavity there that can fill up if the drains become blocked. run your hands along the section where the 2 pieces are spot welded together and you will find a couple of openings, put a screw driver or something up there and clean them out or else it will rust from the inside out
