something like a chev 6.something v8 will fit easy enough with plenty of conversion options, however those motors are pretty much lemons. You'd have to get one of the later ones, which are supposed to be better.
There's also the duramax 6.5 which is worth about 10 times (literally) what your truck is worth for the motor alone.
There's also a cummins 5.9 straight six, but it's a very tall motor and you'd have to do a spring over just to fit it.
An easier and cheaper route would be a toyota 1hd diesel, with some mods to make it go better. And is a vast improvement over the 2h or 1hz you probabyl already have, dispite being fairly small displacement. Plus if you have a 1hz it will bolt straight in.

do a 1hdfte conversion. it will shit all over the chev diesel motors and be more reliable too.
and it'll look factory so it easier to service etc

being the owner of a 60 with the 6.5l init.
I'd go with the above.
The 6.5l isn't a conversion I would do as the improvement isn't worth the cost.
But since I now have the engine, I am looking for a cheap gu or 100 series to drop it into.
