new and bigger is a terrible answer. you need to consider better and more thaught out as another option.

my 79 series ute has bn converted to coils in the rear, (they come standard with leaf rears n coil fronts) heaps happy with the rears, still toying with the fronts to make them work the way i want them to. but i have the problem of having a ute that can be used as a work horse through the wk and a toy on wk ends

Making the car flex will be more beneficial than making it taller. I'm not sure that there's alot of off the shelf stuff that will help you with that, you'll probably have to fiddle with things yourself to make it work. 75s rear springs are already quite long, just too stiff. If you play around with removing 2 of the leaves from the pack, this will help substantialy. If you go too soft though you'll get diff wrap, so will then need a wrap bar. If you loose too much height go a longer set of shackles. Then you'll have a set of springs that should droop quite well. Flex it up wit th shocks removed, take some measurements, and see if the shocks you have are able to match the movement of the springs, n if u need to get longer shocks. Original mounts are usually fine in 75's, cause the leaves don't allow so much flex that you need super big shocks.
Leaf springs work awesome with just a little bit of attention, hope this helps.
