85-90 deg. is what mine used to run at.
I would guess the hub has leaked a little fluid it's not locking up as well as it used to.
Do yourself (and engine) a favour and buy a new viscous hub or buy a couple tubes of hub fluid from Toyota & new O ring seal to rebuild your hub so it works properly again.
Also a 5LE fan is same size and bolts up to existing hub with 1 extra blade to move more air. 1HZ fan will also fit hub, but needs to be trimmed down or new shroud made.

You also need to redrill the holes in a ihz fan too

a standard tridon thermostat for the 2L opens up at 89 degrees as per what is stamped on it.
Mine hovers around that mark, goes up higher when giving it some up big hills and running boost for a long time. My turbo is water cooled as well though.
Cheers

I didn't need to do that to the one I fitted to mine.

Possibly, waterpump was for a 3L & hub was the std one.
