Throttle control 80 series

When in rough terrain my throttle is hard to control. A little bit of pedal does nothing. A little more and I have far too much.
I am looking for ideas to combat this.

hand throttles are used in rough terrain...sounds like your throttle cable is tight...

... or too loose? (if a little pedal does nothing?) what engine/transmission combination do you have?
a good technique for throttle control in rough terrain is to push your toes hard across to the kick panel then with your heel on the floor, rock your ankle/foot to move the throttle small amounts.

DumDunce - 4.5 ltr petrol - auto trans. I do lock my foot against the side, but this doesn't necessarily help.

that sort of behaviour is a characteristic of autos when you put them against an obstacle - you feed in more pedal and the wheels don't turn until you force the motor rpm past the stall speed of the convertor - then it can all start happening in a hurry.
is this something the truck has always done or has it just started doing it recently? it might need an auto transmission service or possibly just a top up of the trans fluid.
