engine oil cooler

I have a remote engine oil cooler fitted to my 40 series 350 chev. it was left over from when i was running the oldsmobile 350 diesel which had oil pressure problems.... anyway, there is no regulation of when the engine oil passes through the cooler at the moment. Is this normal? I got some fittings (T-piece with tap and one way valve) so that I can turn the tap to allow for the oil to go through the cooler or when turned the other way the oil will bypass the cooler. Is this a good idea? or not necessary? Am i right in thinking that its not a good idea to have cold oil going through the cooler? Are there legality issues with doing this mod?

Some cars have them standard, V6 triton is one that pops to mind.

i dout there would be any legal issues and i run an engine cooler and there is nothing in it to slow it down
