When I need to stop in a hurry i'm being pulled to the drivers side. Just wondering where the first place to check is? Is it more common for the discs or drums to cause this? and is it likely to be something more serious than the pads?

Its not likely to be the brakes. Its most likely to be the wheel bearings or wheel alignment...
If its the bearings you should also be able to either shake the road wheel a bit and feel it rattle on the cones or there will be a grinding as you roll along and especially hit the brakes.
I suggest a wheel alignment as you have lifted the front end and thus changed the steering geometry... it will also tell you for sure if there is worn components.
Mine currently pulls to the left... I have worn steering arms and ball joints causing movement in the steering. You may find the same thing. Mine pulls left cos the idler arm is worn more... its the left linkage.
To check your steering arms have someone move the steering wheel left/right and watch under the front of the car if the arms move up and down as they go left/right. If they do they are likely to be worn.
If i havent explained it well check below for an explanation of the parts on a hilux...

Unfortunately ours are not rebuildable and thus need replacement (Or so I have been told).

Sounds complicated......
Just had an alignment done when the new rubber was fitted. Could be the bearings cause i did notice a bit of noise when braking hard. just thought it was the new tyres......

If you had an alignment done they should have checked the linkages, I'd aim at the wheel bearings, you dunked it a bit lately, probably time for a repack...

Yeah i might wait till after our trip.....repack them then. No point doing them then hitting the water again....at least straight away anyway.

Well at least jack your front up and roll them and have a listen, and check them for play... I'm not dragging your sorry ass home too far...
