How do you go about calculating (for dummies like me) how much air you need to flow for a particular turbo setup? Once I've done that how do I figure out the diameter of piping for the intake? I'd just like to take out the guesswork.

If you have the compressor maps you should be able to match that up with the air the engine is using (capacity and rpm calculations)

But if you post on here the engine an proposed turbo people should have an opinion of how it will go.
