heating up

Had a quick search and couldnt find anything about this refering to a 2.8td.
Was on the highway yesterday and i was doing 120 or so, revs were up the 3200 3400 mark, and i noticed the temp needle shoot up. I lifted the foot off the pedal and temp came back down. It wasnt a hot day and all my fans were working fine.
I checked the coolant, its topped up intercooler fan was running, everything was ok.
I tried it again, and sure enough, when i get that high in the rev range temp shoots up.
any ideas?
