Inquiry about the engine temperature

The engine was recently rebuilt and now has over than 5,000 km since the settling. Now the truck, NJ LWB 2.8TD 5p has two thermometer indicators, ones from the Mitsubishi at the console display and the other, the new, has conection to headshaft (?). Before rebuilding the engine, I had no thermometer connected to engine but of the Mitsubishi estandar temperature indicator.
I was observing the behavior of the new thermometer since it varies a lot the temperature depending to the acceleration, velocity, sort of land and degree of slope.
On the other hand, the thermometer from console display remains fixed (about 5 degree lower than horizontal) in spite of the fact of velocity, slope, acceleration and climbing.
When the engine is cool (slow driving around 60-70 kph on flat asphalt), the lowest temperature is 87.7 centigrades. When I drive fast on the city, the temperature varies between 90 to 92 centigrades. When I run at 120 - 150 kph on flat asphalt, the temperature is around 93-95 centigrades.
Now, when I drive off road, over sand dunes, the temperature rise between 220 to 230 centigrades. However, the thermometer from console display didn't rise and remains fixed. Then, when I turn on the A/C, the new thermometer will rise above than 230 centigrade when driving off road and the thermometer from the console display start to rise 10 centigrade and reach to be above 5 centigrade from horizontal line.
Finally, when I drive on Andean tracks, climbing to up 5,000 msnm, the new thermometer shows the temperature to be varying between 210-220 centigrades (slow driving, mostly on the second gear). no A/C.
I look forward in hearing from your comments in order to know if the thermometer which I have told you are normal or OKay or it is somewhat hotter than the average.
