Starting from scratch

I'll give you the short version...
The day I got EVERYTHING finally sorted on the middy, it caught on fire while I was driving. I haven't seen it properly since but from what I could see in the dark, The interior is fine apart from the dash but the engine bay is back to square one.
Question is, given this opportunity, what do I put in there and who do I get to do it?
I'm hoping the VN V8 will have survived but should be cheap to replace and rewire now that the adaptor kit is in. Who is the best Auto Elec in Melb to do this???
Then I was thinking dual batteries, 80 series brake booster (sounds like thats the best one to use from the threads I've read) A better radiator cos it used to run a little warm. (Which one???)
Anything else I should do while I have the chance? Who would you reccommend to do the work?
I have to get insurance quotes on Friday.
All suggestions welcome and have a laugh when you can cos thats all thats stopping me from getting really pissed off about the whole thing!!!!
