The hubs are easy to change. Most trailer parts suppliers will have the hubs required. To remove you have to take the cap of the end of the hub, remove the split pin and undo the nut and pull the hub off. To replace with the new just reverse this process.

It may pay to ask whoever you buy the new hubs from, going to a larger wheel it will it create more pressure on the bearings and increase the chance of failure.

Those rims you currently have are Commodore. You can buy Hubs that will fit straight on with Patrol Stud pattern from most trailer supplies. Looking at the guards you should fit a 31/10.5 in there. You may want to place the axle under the springs if it hasnt allready been done.
