I have seen advertised winchs that are hydraulic and sapposely run off the power steering pump, i was thinking , would there be enough flow/pressure in the average fourby power steering pump to be able to run them ????

Have a look through this list of threads. Particularly the Ox section.

I've got a 10000lb Ox hydraulic on my Rodeo. Well it's actually on my garage floor at the moment. It runs fine off my standard power steering setup however it's slow as buggery. There are lots of threads on how to speed them up but I have never done anything about it as it gets little use. Who needs to use a winch when you drive a Rodeo?
There are many benifits for both electric and hydraulic however I went with the hydraulic as it is heaps lighter than an equivalent electric, draws only 2 amps, can run all day without needing cooling and it was free

I think mainly because it was free
