What temp to set a thermo fan to kick in??

Hey all,
After a heater hose let go on me I've decided to give the cooling system an overhaul.
Whilst the rad is out, I'm putting in a thermo.
What temp should I have it kick in? Going onto a G13BA, no engine mods.
The thermostat opens at 82, and fully open by 95. Would 95 be the correct temp?
I want to put in one of those temp switch things, but not the Davies Craig ones that are adjustable - have heard they are not so great. (actually I read it on here!) Yes - it will have an overide switch.
The thermo should give the mice inside a bit of a rest occasionally!
