Why don't you just get new longer shocks? If the standard ones you got are still new just flog them off rather than reset your old springs for them, which costs around $50 each to do... Resetting springs aren't the best I'm told - keep your 50mm lifted ones! What brand are they?
You cannot fit usefully "longer shocks" to a car that has standard shock mounts and standard bumpstops.
A stock sierra has about 1.5" of compression in the front end, with 5.5" of stock shock travel. A 2" lift will have 3.5" of compression travel and 1.5" of droop. This will be fine.
Personally, I don't like a car set up this way, but I am not into speed at all and like a low car. However, most aftermarket springs for sierras will end up like this.
If the springs you have are way too long, you might damage the shocks by driving around with the shocks fully extended, but this is unlikely.
There are some small increases in shock travel with stock mounts and bumpstops, depending on shock design and the liberty that the shock manufacturer takes with the factory tolerances, but the gains will be very small.
The shock length that can be fitted will depend on the closed length of the shock, which is the distance between the top mount and the bottom mount with the axle on the bumpstop, - 25mm. Many people fit shocks that are too long compressed and the mounts become the bumpstops wihich eventually, will result in damage.
