Engine not registering temp on gauge, but boiling hot!

Gday,
Just came across another issue with my suzuki. I just got the GB back in, and took it for a test drive... the temp was fine to start with, but all of a sudden I noticed the temp reading dropped to about an eighth of the way up instead of a quarter of the way... I then pulled over and there seemed to be plenty of coolant in the reserve tank... about another 2 k's down the road, I noticed that there was coolant on the windscreen...?!!. I got out and checked the level, and the resevior tank had blown the top!... I eventually reached a source of water, let the car cool down, then poored water in the radiator while the engine was running... I could hear violent clicking noises each time water was poured in... (thermostat closing?). Another thing was the heater stopped blowing hot air... I immediately thought 'replace thermostat' (which recently got replaced....). However I took the thermostat out a few days later and it looked fine... When I put new thermostat in, and bled the cooling system of air... with engine running. After the thermostat opened... I turned off the engine.... and immediately it blew 1/4 contents of coolant out of the radiator...???? (head gasket??)
Anyway I am puzzled, can anyone help me, or suggest some things to check...???
