The roof lining in my hardtop sierra is ripped to shreds and falling off, i want to replace it mainly for sound deadening qualities. Is there some product maybe which comes in a roll with a sticky side which you stick onto the roof?

There used to be. Suffered from a bit of sag when real hot as the glue broke down. Prob better nowadays with better technology.
Ask a motor trimmer.

When I did up my old BJ40 (resin Top) we removed the top, turned it upside down and used a grey material bought from a sewing store. (Can't remember what it was supposed to be for but worked a treat)
We used contact cement to hold it but you can get a spray on adhesive for fabric from most craft/sheap stores spotlight etc. Might be able to combine the two to allow you to work with the roof still on

Get pretty much any material you want and use spray gun to apply glue (any cabinet maker should have the gear and glue to do this).
Apply to roof quickly but carfully. Not easy but can be done
