Can anybody tell me please if 75 series diff centres will bolt straight into 80 series diffs?Do the 80 axles fit 75 centres?

Depends, hzj75 series diff centre 1990 on... is thesame as rear 80 series, exactly thesame. hzj75 Fronts are thesame aswell. Before 1990, the hj75 had a larger front diff, these ar thesame as the 60 series (which died in 1990. Now...an early 60 or 75 diff will fit in an 80 aswell....but the ratio is ever so slightly different...4.11 opposed to 4.1. I have seen later hzj75's with the 4.11 in the rear and 4.1 in the front..(fron a smashing previously).they can get away with it because they are part time 4wd, so u can also assume the part time 80 can run a 4.11 in the rear also...
So...if you have a part timer, shove either front or rear hj75 diff in the bck or hzj rear in the back and its sweet, but if you have a constant 4wd, only hzj75 diffs.

Yes they will fit in the rear only, 1990 on 75's will fit the front and the axle splines are the same ( Dia 33.3mm 30 spline axles )
