apart from the obvious (seats) i don't know how much there is to strip. As it is the Vitara is a fairly light car with little unneccessary add ons

convert it to two wheel drive.. remove transfer case :|
remove one of the rubber bands off the engine.. as said they are light enough.. if you want more power then put a bigger donk in it
2" Susp lift, Ext shackles, RTC damper; Offsets, Custom interior panels, Stereo (+Sub), rubber Checkerplate floor, Custom Centre console, Under bonnet storage

If you really want to loose weight. get rid of trasfer, body, chassis, diffs housings, replace with sierra stuff. keep, power steering 1.6 engine auto gearbox diff centers. :D
