I think you are pretty much answering your own question- you will be buying the best $2000 sierra you can find.
I prefer a LWB - climbs better and more room for stuff.
$2K could get you a rough wide track, a 1.3 narrow track, or a 1.0 ute/tray
It will probably not get you a 1.3 LWB tray or styleside, as these are quite rare and should still fetch well over $2K in usable condition
What is your real budget? to do "hardcore" 4wding, you will need around a 31" tyre, at least a rear diff lock or a welded diff and transfer gears.
A 31" tyre will fit with a 2" blody lift, leaving springs entirely up to you based on your budget.
Depending on how you want to do this, this could cost another 2K, or $6k
Remember that your real budget will have to include getting the car up to scratch. so it is reliable. lockers, big tyres and gearing are no good beside the track with the bonnet up.
IMHO, the following stuff is all worth doing if you buy a car cheap
Allow new wheelbearings and seals all round, potentially kingpin bearings and seals, a set of unis, change all fluids, thermostat, new cap, rotor, plugs and leads, fuel pump and filter, brake fluid change and pads all round.
At this point, you should have eliminated any annoying bugs and you can get on with driving it.

On the "appreciate some comments from suzuki owners" thread 1/2 the board seemed to think that 1.0 LWB's were worth nothing.
1.3s stylesides are obviously still wirth $$$$ - the last two that came into the club were just over $2k and pretty rough- needed lots of work to get them up to scratch.
The last two LWB 1.0's that came into the club were $300 and $1200 respectively, both were very rough ex farm cars and needed heaps of work. However if either of these cars were SWB, they woudl have been wrecked out rather than rebuilt.
I think the biggest problem is not what they are worth (mabe $1k more than a equivalent SWB?) but finding them at all.
