I wonder how many hours is took to cut the tyres like that? Each side has been done and every lug has been cut and shaped. What sort of tool would you use?

A tyre regroover. The same as you use on truck tyres. Carves them up pretty good.

Look to be the same as whats on the red one.
There a Micheln tyre, maybe XML of something. Havent looked at them in ages.
