Do I use the front and rear vit diffs into sierra to run larger wheels
Why are sierra diffs no good for 31s
Is it hard to install them into a Sierra

Vitara diff into sierra
I assume you mean putting the vit R&P gears into sierra diff housings. You dont NEED to do this to run larger tyres, sierra diffs are fine with 31's, im runnin 32's on them.
However the gearing is the problem with sierra diffs and larger tyres, so people either buy reduction gears for the transfer case (approx $1000) or another possibility is putting the 5.12 ratio vit diff centres into sierra diff housings (some work is needed for this but i've never done it). This apparently brings the on-road revs back to near standard but you dont get as much reduction in low range as you would with reduction gears for the transfer.
For the hassle i'd just go for the transfer gears

The front vit diff will bolt straight into the seirra front diff, the rear you can change the centre hemisphere over to a sierra rear one as the rear axles are larger but then you have the alloy case which apparently is weak. I just put the vit r&p in the sierra centre.

My rig has 4.16 transfer and 4.8 diffs with 33s and it is still abit high off road but on road it does 4000rpm at 85km/h.
This isnt ideal but I bought the transfer gears nearly 10yrs ago now and it was the only choice.

31's are fine with sierra diffs. depending on where you are and how you drive, sierra diffs can live accetably with up to about a 33 on them. Of course, some people can break anything though. that says more about them as drivers than highlights any problem with suzuki parts. for me, I am happy to build suzuki stuff stronger rather than start with a heavy diff with average parts in it.
The bigger problem will be the gearing that vitara diffs provide. the most common vitara diff is 5.12 and it will be too short (you'll be revving too hard) with a 31. A better solution would be transfer gears and leave your diffs alone (and possibly cheaper too) or much harder to fnd 4.6 vitara diff gears.

Don't get me started on hilux diffs under sierras. they are a dumb choice for sierras. If I wanted a heavy car with no ground clearance I would own a hilux, thankyou very much. I have owned three.
