a three inch is much better but space may play and issue fitting it under the car maybe with a body lift it would fit better

Jake,
Definitely go the 3", It will let it flow just that little bit better. I don't know if cost is going to be a factor but there won't be much of a flow difference if you just go press bent exhaust. Take it to a truck exhaust place, they tend to do a better job on the bigger exhausts.

Cheers

Is the turbo coming as part of a kit? Denco supply aftermarket turbo kits complete with mandrel bent exhausts!
If you want a spare 60 for bits-

I got a kit for a 2h with a schwitzer turbo and the exhaust is mandrel bent to the rear side of the muffler (which is straight through) and pressed for the last 2-3 feet. 3 inch exhaust would be good though.

Dont get to flash (read expensive)
no need for mandril bends
2.5 inch short as possible with a hot dog (just so it looks like it has an exhaust)
does the job fine on my 3bt

I think they say the exhaust only needs to be as big as the dump pipe from the turbo...

Go the 3". Had a 3" on my old turboed 2.8 Lux. Went well and whisled its head off down low, at first ran with no muffler at all, but the bark under power got anoying so put a straight thru on it and got rid of the annoying bark. Blew my mates 2.8 turbo away but i had some head maching done and also got it match ported. seemed to work well.
