In a previous life, I used to own a fuel injected Citroen DS21. It was (and still is) magnificent. The compression ratio was 10:1 and the cylinder cranking pressures were higher than anything I have tested before or since. It did a superb job.
One time, I was somewhere where there was only standard petrol - not super as the premium grade was called then, so I filled it with standard and it ran really well - no pinging, not dropoff in performance. However, this was at about 3000 feet above seal level. At sea level, it rattled like a machine gun and I never ran low octane fuel again.
So the simple answer is that probably nothing will happen with the 3.5 L engine on regular unleaded, but really for peace of mind, I would tend to use premium as the book says. This is especially so at Wangaratta's altitude.
My NL uses less fuel when I run premium compared to regular unleaded, but I have been told that there is a knock sensor in it and that would account for the difference. The 3.5 DOHC probably has a knock sensor as well.

Worst case, I would say retard the timing by a degree or three - if it still has a mechanism to allow this?
Why are you so keen to run standard fuel? As date suggested, you may find improved economy pays for the increased price. Is it primarily availability you're concerned about?
I run my Paj on 98, not because it needs it. When I checked the figures, cost per km was about the same both ways, so I work on the theory that the extra range may mean the difference between making it to the next fuel stop or not - I've been caught out once or twice...

i am 99% sure the 3.5L DOHC has a knock sensor which will allow you to run standard, but at a reduced performance level and "slight" pinging, which you may or may not hear.
They only require the 95 octane premium unleaded.
Just on a side note, please do not be tempted to put one of these motors on gas . A freind of mine had a gas system put on and when it back fired it bent the variable inlet manifold throttle plates.

Running the DOHC on regular shows a massive decrease in performance. Economy will increase by 1 to 2L per 100kms.
Premium fuels will clean fuel systems and improve economy, so you are saving money by running the 'more expensive' fuels.
Even Ultimate Diesel shows an increase in performance and improved economy over regular diesel.
at the end of the day an extra $10 isnt going to kill the bank either
