How deep are your pockets, nothing is impossible if you throw enough time and money at it.

Look at a good tuneup, fresh filters and oil.
Is your 2.6 carbed or injected?
A set of headers and a 2.25" exhaust and tuned to suit would be about it without spending real money on port jobs and cams.

A 2 in suspension and a 2 in body life are doable.
Give QLD transport a ring and see if you can do both at the same time.
A Lokka in the front diff will work wonders and the old girl will climb things slowly instead of having to charge everything at speed. Get the LSD in the rear serviced if you have one, if you dont have an LSD in the rear fit one.

I had a rodeo with the same problem, after 7 years with injector pump tuning, bigger exhaust, suspension lift and a front lokka the major mod was sell it and buy an 80 series cruiser.
Mind you I sold mainly because my boys are growing exponentially and I started towing a camper trailer, it would go around 90% of the places a big truck would go, and it pulled up hill better than the cruiser, but the lack of articulation and ground clearance would almost guarantee damage if you weren't careful.
The old jac's are a good unit but they arent a cruiser/ patrol.
Have a look here;

The yanks call them troopers and do some wild mods to them, not all are legal here.
This site is Australian and has some good info on jac's;

all 2.6 were EFI so it should be easy to convert back to EFI
you should be able to put the later model diff's in
I have a 89 2.6 jack and i think the chassis is the same from 81-92
i think they changed to the bigger diffs in 88
ISUZU MU's and GEMINI's

Mate get out there and drive it.
You'll quickly learn what it can and cant do.
You may find that the driving you want to do exceeds the limits of your ute in which case start looking for a vehicle that will do what you want to do, or that it does everything you want and you'll keep it.
The quickest probably easiest way to more power would be to fit in a 2.6 injected. You have to look at value for money bang for the buck etc.
Its very easy to spend more than the trucks worth in mods. Learn to drive it as is.
Suggested mods, exhaust and tune, a decent set of aggressive all terrain tyres, an off road 4x4 driving course, it thats not enough a 2 in suspension lift and a lokka in the front.
The best mod you'll make is to improve your driving skills.
